About Archipelago, A little history

Archipelago Bakery is a small, independent and organic bakery in the New Town of Edinburgh.

Caroline grew up in Edinburgh and after studying at University worked in the Museum and Gallery world before entering world of finance. With her passion for cooking and baking she decided to set up her own business.

Gaining experience in Paris, Oslo and Sweden Caroline undertook the Professional Bread Making course offered by Andrew Whitley of Bread Matters.

Archipelago Artisan Bakery first opened on Queen Street, Edinburgh in 2014 and in May 2015 moved to a larger and sunnier location on Dundas Street in Edinburgh.

We try to keep it simple at Archipelago and all our recipes for the bread use 100% organic flour and are based on old-fashioned techniques such as using cold water, proved for a very long time and only using natural ingredients. Everything we do – bake, make or sell whether it’s our bread to our salad, soups or cakes – we do from scratch every day.

We only use organic flour for the bread and cakes. We put a lot of thought into where our produce comes from and all our products are either organic, local or of very high quality. We choose not to compromise on quality – we believe this is the key to it all and enhances the flavour and taste of everything we produce as well as being better for one’s health. We make our goods by hand every day and use what we think looks good or is in season. We try and test all our recipes in advance often tweaking them here and there until we get them just right.

We have a great team who are all passionate and enthusiastic about what we do and producing the best quality they can. Reputation and customer satisfaction is at the top of our list and we do everything we can to achieve this on a daily basis.
